Schokoladen Platzchen

8 egg whites, room temperature
1/2 teaspoon salt
1/2 teaspoon cream of tartar
1 pound powdered sugar, sifted
1 pound almonds, very finely chopped in a food processor with a blade (or almond meal)
1/2 pound bitter chocolate (unsweetened), grated finely
butter and flour for cookie sheet

Preheat oven to 300 degrees. Butter and flour a cookie sheet.

Beat egg whites, salt, and cream of tartar until mixture begins to get fluffy. Gradually add powdered sugar and continue to beat until peaks are stiff, about 8 to 10 minutes.

Gently fold in the very finely chopped almonds and the grated chocolate.

Spoon the mixture in 2-inch mounds onto the cookie sheet. When the sheet is full, lift it up and then drop it back down onto the counter to set the cookies.

Bake cookies for 8 to 10 minutes, avoiding any browning.
