The Fabulous Flavor of Fennel

Fennel you say? Yes, fennel we say! You’ve got to experience the flavor of this completely underappreciated vegetable. With a pleasantly striking, yet subtle touch of anise and a slightly sweet crunch, this versatile veggie is a must for your grocery list this fall. Fennel is at home in salads, soups, and sautés alike--fresh and juicy when raw and more intensely flavorful when cooked.

Also a feast for the eyes, fennel has a beautiful, pale green bulb with dark green, celery-like stalks and feathery, herbaceous fronds. It’s best consumed within three to four days of purchase and is packed with vitamin C, fiber, folate, and potassium. Okay, enough with the hard sell.
